Change default Debian release from bookworm to trixie in docker-bake.hcl and debian/Dockerfile Ensure builds use the latest Debian LTS version

Ping @gounthar looks like there are conflicts: could you rebase and fix them (so we could proceed)? The release on this image will be easy: this is considered a "breaking" change so we'll only have to bump the major on the next release. |
